What changes with A.I. level? Does the A.I. make fewer mistakes, or get some kind of production bonus? Will an "impossible" level A.I. consistently beat an "easy" A.I.?

Easy AI has less points than normal to create a god. Normal AI has same points as human to create a god. Difficult has more points and therefore you'll see higher magic and better dominion scales. Doesn't appear to make better decisions on point spending, ie. good bless effects depending on nation, high productivity for resource intensive nations, etc.
Don't know the specifics, but that appears to be the only differences in difficulty.

For instance, even easy Ermor AI will consistently beat an impossible AI of most other nations. This is why most SP games should probably be run without Ermor.
