what happens when an immortal who is not amphibian dies and your home province is an underwater province?

I don't think this is possible. No non-amphibious chassis are allowed for non-water races, unless you've been modding the game. The liches are naturally amphibious independent of their water ranks, and they're the only immortals available to underwater nations.
Otherwise, it would go into an endless loop of repeatedly spawning and dying every turn, I suppose. It depends on whether the "spawn from death" occurs first, or the "die from drowning" occurs first. If drowning occurred first, then the unit would respawn after drowning checks were made, and then die next turn, unless you gave it scuba gear. Otherwise, it would spawn, and immediately die, probably endlessly.

It is possible, though, for aquatic nations to get immortal summoned units, such as vampires.

Exactly. This came to my mind because i had wished up a VQ and started powering her up in a SP game as R'yleh. She never did die... just wondering what would have happened if she had. Or would she have gone back to the province i wished her up at?

VQ and vampires are flying so i don't see a problem with them in water provines... of course strange is other to me - how do they figth with underwater creatures, attacking them in underwater provinces?

Ur rigth... My VQ entered underwater becouse of water magic. Vampires can't go underwater either, unless them were with VQ who was allowed to take a few units with them. Stupid me http://forum.shrapnelgames.com/images/icons/icon12.gif

One thing that I can tell is that getting respawned underwater as a wight mage because of the twiceborn enchantment will lead to your inmidiate drowning.
Found this out when I was trying a weird idea, where I took a cheap voidlurker as pretender and teleported it on land to be respawned as a wight mage with mobility and full item slots. Next time I'll add some water magic to solve this little problem http://forum.shrapnelgames.com/images/icons/icon7.gif .
