Diseases tend to ravage my armies. Enemies casting leprosy are brutal, and troops eventually die off. Is there a defense against this? I know disease does not affect undead, but how about demons or other summons? Out of curiousity, what benefits do demons/devils get?

None other than affliction removal.

Demons are also unaffected by disease. This is useful for Abysia where they can prophetize a demonbred to make him a full demon, then have him lead armies of devils around against Miasma C'Tis.

If you're making a defence war you can try to cast Domes.
Otherwise there're few to do to prevent someone from casting his remote spells, unless your scouting is good, and you find the province(s) where his mages are located and launch a carpet bombing mission, or paradrop some troops/commandos or send assassins ... however you try to kill his casters.

be glad that your enemy wastes his gems with that http://forum.shrapnelgames.com/images/smilies/happy.gif
10 death gems for a magic resistence negates spell with the only result of MR-fails throw is diseased is not so scary http://forum.shrapnelgames.com/images/smilies/happy.gif
as graeme dice has said undead / demons are not affected by this . so try to get an army of them .
if you can't do that you can :
-forge the chalice (heals)
-cast GoH
-if you are arco this is a total gem waste because your arco priestesses can heal
-you can summon 1-2 fairy queens which can also heal
and because mr - negates at least most of your mages / scs are normally not diseased only parts of your army . but they are fodder anyway so don't care http://forum.shrapnelgames.com/images/smilies/happy.gif and you only lose 1 hp / turn when diseased . so when you have tough units ( e.g. vine ogres ) it takes a really long time until they die ( about 50 turns ) from the disease .

Well this is making quite a few assumptions. For one, that he's relying mostly on Vine Ogres or similiarly beefy troops. Disease is not so trivial if you have an army of, say, Vans.
Also, Disease causes additional afflictions, so even if you are using big beefy stuff like Vine Ogres they will probably end up blind, crippled, and useless long before they actually run out of hitpoints.
Assuming you do not have easy access to healers or Gift of Health, I think the "find and kill the casters" approach is best. And if you are on the defensive then this is just one of the many reasons that you would want to put some Dome spells on provinces where you keep large armies. Other than that I don't think there is a good way to defend yourself against stuff like this.

to be honest diseases ( mainly from supply problems ) and with that low morale for my troops are a main reason why i personally don't like nations which have lots of troops and aren't good death / blood magicians .
this way you have always to care about supplies and a early war against ermor / pan cw is the pure horror .
furthermore it forces you to forge lots of endless bags of vine and other supply items .
fortunately only very few nations have this characteristics . standard pangenea and machaka are 2 of these few nations . most likely i don't like them too much because of this reason , especially machaka .
most likely my aVersion against this is that i love death 3 sloth 3 scale and cheap castles .
furthermore i like raiding too .
if i would play machaka i would have to abondon some of my otherwise loved tactics of scorched earth .

Hey! Watch Out, Pangean Filth. The Spider Lord is reading this.
(But, I'm curious to know why you like death 3, sloth 3. If have seen other players like that, too. What is the advantage? Is it because then your home provences are of little use to your enemy for a long time?)
