Do castles protect commanders from assassination attempts? From Wild Hunt, Earth Attack and the like?

No, with occassional yes.
I don't think anyone inside a sieged castle can be assasinated, with normal means or Earth Attack, but on all other times, castles offer no protection.
I recall there was some kind of a bug with attacking a castle and Lord of the Hunt fighting one of the sides, which caused province ownership to change. But without that, I quess only the sieging force would be in danger.

Earth Attack definitively works on commanders sitting behind walls: in Entwined Destiny, Ulm used that spell a lot, taking down miscellaneous commanders (and a Pretender) that were hiding in a castle. Not sure about regular assassination attempts though.

If I use Earth Attack or similar attack spells, am I assured that they will target my enemy within the castle, not my people seiging it?

You will not target yourself with such spells, so it's fine (the Earth Elemental belongs to your nation, unlike the Ghost Riders). If a third nation targets the besieged province, I believe they will hit the besiegers (yourself) however.

Earth Attack won't target your own people, but Manifestation might. Learned that the hard way a while ago...
