Hi folks,
is it possible to play Dom 2 with the demo version if the game host has the full version?

Yes. But the person with the demo version will still be subject to all the limitations of the demo.

Meaning after turn 40 the full version player has won, as the enemy cannot do further turns?

Yep, and the demo player would have the unit restrictions and magic restrictions inherent to the demo.

Also - many of the MP games tend to use mods such as Zen's balance mods or Saber Cherry's recruitable unit mod, etc, and the demo can't do mods.

However, if you wanted to have most of a game managed, try using one of the tiny maps (Urgaia especially) - 90+% of the blitz games we play on that map never get to turn 40. You'd be better off having everyone use the demo version though, to restrict everyone's research levels, and also because I don't think the demo is the same version as the latest full copy of the game.
