Is it possible to disable and board an enemy ship in combat and claim it for yourself? (not the abandoned hulks)

yes, since the patch there is a flag you can set on ship hulls. this will enable them to be boarded in combat.

But can this be done in the standard game by say, killing it's weapons and engines... then boarding.

Maybe there should be a pirate boarding party item in the universe... MODDERS!!!

sadly, i dont think we can mod an item to make ships bordable. boardabilty requires a flag to be set on the target ship, and your stuff can only effect what flags you've got on your own ship.

but that is a swanky idea. maybe the next patch will enable items that permit boarding. I can imagine a scripted item that disappears on use, that lets you capture a ship. you would have to carefully weigh what kind of ship to use it on, since it would be a one-shot-deal.

the prospect of boarding a yellow kawangi, or primordious's station (which i guess you would need a hyperdrive ship to move) is rather frightening.
