Now before you ask what would be the point, I'm just looking for a simple yes or no on the question about whether or not a SEAD classed aircraft would still prioritize AAA elements over other targets?

Early purpose built SEAD aircraft did not have the benefit of ARMs and I would like to create some instances of these. However, if its not going to work or not going to be any different than a regular strike plane there isn't a point to doing it.

The entire point of the SEAD class is to put all ARM armed planes in it. Because if you give a normal strike aircraft ARM, the user can be confused as it will go for radar AAA/SAM (if present) instead of the troops he actually targeted it on.

It is the ARM that gives it the radar hunting targeting strategy, and not the weapon class. If no ARM, or none left, or there are no radar targets, the SEAD class will operate as a strike plane.

Cheers
