If there are already 5 Globals in play, and you cast a new one, which of the 5 gets replaced? Does it have the possibility to replace my own? Will it replace the highest possible enemy one? The lowest enemy one?
I am sorry if this is in the manual, but I do not have mine at the university.

It's random, including potentially your own. The only exception is if you're casting a global that is already in play, in that case it will try to dispel that one and replace it with yours.

The other exception is if you encounter the rare occurance which causes six globals.

Does it matter if some of the existing globals were cast with boatloads of extra gems? If not it seems like you might be better off casting new globals to try to dispel existing ones rather than directly dispelling.

If there are 5 you will target random. And if the existing one was more loaded than the one you are casting it won't be dispelled.

Extra gems means the global in question is harder to "dispell". That means actually casting Dispel, and other ways spells get dispelled. If you cast a global when 5 are already up, the game will RANDOMLY pick one to attempt to "dispell", with out regard to how hard or easy it will be to dispell. If the spell selected had a lot of extra gems in it, then chances are it won't be dispelled unless you used extra gems.
