I want to script my archers to shoot the elephants - should I use calvary or monsters?

I would target large enemy monsters since elephants are size_6. Personally I feel elephants should be a smaller size.

I would think that cavalry goes for stuff that has the #mounted tag, whereas large monsters just tells them to target the biggest thing on the battlefield. Hence, large monsters will usually target size 3 cavalry rather than size 2 infantry.
But that's just speculation really.

AFAIK, both work, but the troops might choose other targets as well.
Monsters -> elephants, titans, perhaps some size 4 or 5 creatures (draconians, weaker titans, some fliers)
Target Cavalry -> elephants, knights, mounted archers, chariots
So against eles + titan combatant, target mounted. Against eles + chariots, use monsters to kill the elephants, or mounted to target both.

I recently give my archers fire cavalry orders vs Pangaea's white centaurs. I assumed white centaurs would be classed as cavalry but the archers completely refused to fire at the white centaurs. So I have to assume white centaurs are not classed as cavalry.

That's true. Centaurs don't have the #mounted tag, they are just fast creatures unable to use boots. This means that various armors' encumberance values affect them as infantry (knights would ignore the enc of armor but would have increased enc instead), have higher innate defense but don't have the mounted bonus (knights have +3 defense), etc.
