If I put a leader with a large force on "Patrol" and that province is attacked, is there a defensive hit for being on Patrol (as opposed to just "awaiting an attack"?

No. Patrolling is essentially the same as defense except :
- you reduce unrest,
- you have a greater chance of finding stealth units,
- you defend outside of a castle or fort.

i have a question regarding patrol...
when i have a commander patrolling with (or without, doesnt seem to matter) troops, in a province with a fort, then the fort gets attacked, my troops dont help, only the natural defense value of the province seems to fight the attack. usually it gets beaten and then all my troops out patrolling magically teleport back to inside the fort and are under siege????

this makes no sense to me but pretty much without flaw it happens every time.
if i dont leave them on defend, with no action, they wont help defend....

this is only for provinces with forts, i say again...anyone want to explain??

You have it backwards. Patrolling (including Move & Patrolling) leaders do defend the province, all other leaders hide inside the castle. It does really work that way so whatever you are seeing, it probably isn't really there. :-)

"The difference between 'Patrol' and 'Defend' in a province with a fortress is that patrollers will engage in combat outside the fortress, while defenders will concede the province and become besieged."
