How do I un-glamour enemy troops? Does the black-mirror do this on the whole battle-field?

It should, I think.
Otherwise, large AofE damage spells are good. Even a single point of damage takes off Glamour.

What about single target spells like starfires?
According to the manual Mirror Image should be negated upon a hit from a magical weapon (and spells count as that unless they are mundane, right?).
What I want to know is if the Mirror Image has a certain chance to deny the attack or does the spell hit automatically if it hits the right square.

Err, mirror image is negated by damage from any source - mundane or not. Mirror Image has a chance do protect against melee attacks only - ranged attacks have a normal chance of hitting.
Non-AofE spells aren't always going to hit when they impact the correct square. They might hit an empty part of the square (if there are less than 6 size units of troops in it), or the damage might be absorbed by armour/shields. Star Fires won't be affected by the second factor as it's AN, but many spells are.
I suspect you'd find missile weapons more effective than Star Fires against most glamoured units, because you can get so many more in the air.

I would be surprised if there were a separate check to hit part of an empty square, because the missile check already covers that. I think it's
1.) Select a target randomly from units, if any, in the square.
2.) Apply the missile hit formula from the manual (an opposed roll taking into account defender shield, fatigue, and how crowded the square is).
That's why it's effective to give mages bodyguards in their square, because even though the chance of losing the opposed roll goes up, the chance of being the selected target goes down by a factor of three with 2 bodyguards. And mages usually lose the opposed roll anyway because of fatigue.
