Is there a hotkey to have a commander forge an item monthly?
Also, I seem to recall mention of a key to remove researching units from the army management screen.

I've had a look around, but neither I nor google can find the old hotkey list!

2: Not any more - there was in Dom2, IIRC.

The key to hide researchers in the army management screen is Tab.
Also, if you press G in-game, you'll get a list with almost all hotkeys.

But for commander monthly forging you need to use an external keymaker such as AutoHotKey
