I noticed the unit art for Ashdod is vastly improved over the original nations. Does anyone know which other nations have the better art as well?

As that and a few more nations were added after the release, the dev(s) might've seen some more effort in drawing the graphics - you should check the same nation line, Hinnom and Gath also. Can't remember which other nations were added after release though, Bogarus?

In a phrase, practice makes perfect. KO got much better at drawing over time.

They hired a new artist when they did Bogarus. I don't know if the same person drew Hinnom.

Some undead got a facelift in recent patches. LA Ermor dusk elders for one. I think the 6 generic skels also look different now, although I found no new sprites in most recent spritepack.

Nope. Bogarus was done by Gabriella, an intern to Illwinter, and Bogarus was her project. The other thing that she did was making a collage of KO's sprites (http://forum.shrapnelgames.com/showthread.php?p=527227#post527227), probably as reference for herself. Everything else is from KO.

.. and that some of the old sprites are looking ugly in comparison might have to do with the fact that they originate in Dom 1 (DomPPP)/ Dom2, and had half the resolution that sprites use in Dom 3. They had to be rescaled, as redoing several thousands of them was simply not possible, for obvious reasons ...
