If I move a Vanjarl I have to press Control or it hides. What happens if I use cloud trapeze, will it automatically attack or will it hide?

I'd recommend testing this. That said, from memory I'd say that they attack on landing.

They don't auto-hide when using magical movement spells.

Recalling from memory:

They attack when landing on hostile.
They hide when landing on allied province.

As mentioned, if you cloud trapeze onto enemy territory you will attack. If you cloud cloud trapeze (or teleport, etc.) onto your own territory you will be set to defend orders. This means that if the province has one of your forts you'll appear inside it.

A useful bit of info is that if you have a sneaking unit already hidden in an enemy target province and set them to attack they will join with the cloud trapezing unit to attack during the magic phase. This can be a nice way to add units to your attack while only paying for one cloud trapeze.
