If you could get any national summon or unit to be the chassis for your pretender, what would it be, and what would the starting stats and abilities be.
To start things off, the Ryujin from the jomon would be fun, I think it would have 2 water magic and cheap access to other paths (maybe 30 per path) and 2 domain.

Something like Ulm's Iron Angel would be neat. Give it some earth magic, a modest forge bonus, excellent combat abilities and make additional magic paths exorbitantly expensive for it then turn it loose to terrorize heretical sacreds.

The Ether Lord and Coatl would both be nice enough. They have fairly good magic, and in both cases can have Astral 7 for cheap. The Ether Lord then has good Death Access, and the Coatl can cover a Nature/Earth/Astral bless, which is absolutely fantastic for some nations.

In the same vein: Marignon's Fallen Angel, as a specialized variant on the Moloch's theme. Start the god with F1D1B1 Fear +0 Dom 3, 80 points for additional paths and 100 or 125 points for the chassis itself.

Azazel, the Lord of Civilization, would probably be the first choice.
But the Eater of the Dead, if changed so it didn't go uncontrollable at the last stage, would be funnier as a pretender. :D

Actually, Knai, the Coatl already exist as a pretender choice for MA Mictlan. Called the lawgiver. But he is shape shifted into human form in pretender selection. You can shift him back if you chose him.
And I am still surprised over the composition of some indyprovinces. Yesterday in a test game I stumbled over Pazuzu the demon lord as an indy commander guarding a desert and kitted with bad SC equipment.
I have never seen that one before.

Though why you would want to is beyond my ken - he gains maybe a couple dozen hitpoints (and a standard, weeeee !) at the cost of half his item slots and becoming cold blooded. He doesn't even need to be in Coatl form to fly around !

Totally my choice.
And while it's not really a national summon, a rimtursar (don't know the singular) would be pretty cool for Niefelheim.

I think he changes shape upon death.

I've been missing Trees as pretenders ever since.
An immobile Treelord pretender with Nature and a bit Earth, generating a not so small amount of Nature Gems per turn would be super thematic for Man and also usable for TNN, Eriu, Pan and all other Nature nations. There is even Yggdrasil as mythological source for this. (Getting in Norns also would be cool in this case).
Treeants would also be a great choice as pretender chassis and even Ivy Lords could do.
Plants are underrepresented anyways. What about a giant subconscious fungus as pretender? (For the biology geeks: I know fungi are no plants....)
Or a giant Bloodvine.
Or something strange like a field of Orchids or the like.

The monolith generates nature gems because of druidic rituals, so that's similarly immobile and nature-generating.
There is a mod out (http://z7.invisionfree.com/Dom3mods/index.php?showtopic=514&st=0) about a nation of fungi which has some pretty clever mechanics in place to support mobile and immobile mushroom monsters.
I know neither of these are exactly what you're asking for but they're kinda close and available today.

Crossbreeding isn't useless. You can get some pretty cool results, especially if you're a powerful mage and you have luck scales.

You'd choose a generic Seraph (http://dom3.servegame.com/wiki/Seraph) over Azazel!? (http://dom3.servegame.com/wiki/Grigori_%28Azazel%29)
