Long time player with a question.....
Let's say I have 6 movement points (as infantry unit), can "taking cover" order accumulate more cover if I were to use the whole 6 points of movement? (3x2)

No, it's just increasing the unit's chance of actually in-cover.
You see, even if you press C there's a chance the unit is not actually "in-cover" (the enemy can see still see it, for whatever reasons). Pressing C just tells you the unit is attempting to be in-cover.
Also, this "cover" is actually LOS-breaking (aka concealment), not giving the unit more protection against bullets.

3 tries would give you 3 goes at breaking LOS, but if the chance was only 5% - maybe not much use. For example - if there is an elite unsuppressed infantry unit looking at your team from 50 metres...
taking cover depends on your skill, how many enemy have you in LOS, the distance from them, what cover your men are in (in rough or woods is better, in the open - not so much). And also how suppressed the enemy are, or if they have moved fast etc.
You don't achieve "cover level 3" if you successfully take cover 3 times either - once is enough to break their LOS.
