There actually *is* a project to make a Linux XBox, and it looks pretty successful. They've dumped the BIOS and stuff and have even run WinE in Linux, and run a windows game in it, with decent results I think. They've had to solder parts onto the Xbox mobos, but it sounds pretty cool.
Edit: they do have USB connectors for the Xbox too, you can hook up a keyboard and mouse, and there are even parts to hook the av port up to a VGA monitor.
