Does anyone know if there is a limit to how many ships can be fleeted together with a single quantum reactor ship and still have limitless supplies?

As far as I can tell there isn't. Unless that 60000 supply thing is still around (Ya know before the patch that made it say endless) which would mean that 60000 ships in one fleet would deplete it each turn.

But seriously, I do not think there is a limit to fleet size, and that reactor does give endless supplies, so One ship would probably do for the whole fleet.

Yep, there seems to be no practical limit on the QR. As has been discussed before in other threads, this seems unrealistic. There ought to be a per turn "rate" of supply production even if it never runs out. There is a difference between infinite supply production and infinite RATE of supply production.

I agree with the good captain.
Realistically a quantum reactor should provide for the ship it is fitted too. I think that the quantum reactor should be renamed the Cornucopia Reactor, it provides supplies beyond abundance.

I changed the ability of the QR from quantum reactor to solar supply generation. I gave it 1500 supply generation per star. This limits its effect somewhat. Play with the number until you get the effect you want. Most AI ship designs call for solar supply so you don't screw up the AI to bad.
