Running Dominions 3 on my MacBook Pro... OS X 10.5...
I tried putting some new map files into the appropriate folder of the Dominions3 package
Right click the Dominions3 package, choose View Package Contents
Contents\Resources\maps
and then I started up the game and selected Create a New Game - and then boom, the game crashed.
Is there anything I'm doing wrong to install maps?

Can't tell exactly without more debug info. Maybe a bad map that you picked.
If you can, then start Dominions in debug mode and post the actual error message.

There was some confusion about where maps and mods go in Mac installs and what you need to do. If you do a forum search, you may find the thread. It might be a good idea to include that in the FAQ.
PashaDawg plays Dom3 on a Mac at least some of the time and is also a mapmaker, so you could ask him by PM.

You no longer need to go into the package to install maps or mods. In the Dominions 3 folder in your home directory, create a folder called "maps" (or "mods", for mods). It will be at the same level as ("parallel" to) your savedgames folder. Then dump your maps (or mods) into the appropriate folder, and the game will find them.

K - should have realized that that was what the Dominions3 folder in my home directory was for.
Needless to say - the game still crashes when I put the maps in the maps folder of my home directory.
I can load an existing game just fine, but when I try to hit Create New Game - boom!
Here's the output from when I click the Report button after the crash
