Playing a game and of course the AI I am friends with goes bad for me which the mood changing for the worse each turn until they declare war. Is there a way to prevent that or is it just pre-programmed to do those things?

Look at the AI_Anger.txt file for the race. You will see what makes them happy or angry. I think with most they generaly get more pissed off each turn. Gifting and tributes will make them a bit happier.

Yes and No. It is indeed linked to AI files, and you can not do much for your current game, but in futere you can edit the AI files and it will be your friend no matter what !

I guess if I edit the file now it would cause some kind of error?

You have probably reached Mega Evil Empire status.

From the FAQ:

13.1 Mega Evil Empire (MEE)
13.1.1 Settings.txt governs if & how MEE is used. Basically, if used, this system tries to limit an empire from running away quickly and winning the game. If a player is declared MEE, all AI’s will declare war on that player. A human or an AI can be the MEE. It does this by comparing the #1 player’s score with an absolute value and to the #2 player’s score. With default values, a human player becomes MEE when his score is 500k and is 170% of the next highest player. It is a little more forgiving on AI’s since they won’t be MEE until their score is 250% of the #2 player. New players are sometimes unaware of this and can’t understand why a game is going great and then suddenly the whole galaxy appears to turn on him. This is why.

Some information is stored with "empire" (or .emp file between games) and some is accessed by AI every turn - like resaerch.txt file or design.txt file.

It is also likely David is correct and you hit MEE. In future you can even operate how any particular AI will react to MME, but modding AI is a game insed the game. http://forum.shrapnelgames.com/images/icons/icon7.gif
