The Adamant Mod is your heaven, but not good yet for single player as the AI is still not up to par.

Space food empires mod is in beta testing and has a lot to offer.

The Extra Mod

The Eclips Mod

The Dark Nova

And one of my favorites, the Carrier Battles Mod.

(Not sure about SP AI though.)

ALl of these mods add more technology and game play.
