So in order to see enemy moves, I have to make the game sim-turns, where everyone moves at the same time?

No; in regular turn-based you should be shown the enemies moves as they occur during their turn. (IIRC, been a while since I played that way)
That's if it was an AI, and you're playing alone..I'm not sure if there is a way to do this PBEM.

Also, you must have a presence in the system to see movement. Most players use satellites for "listening Posts", just stick on a scanner package (or just a satellite with a computer core, if you have no cloak scanners), and dump them outside your borders.
Also, IIRC, I believe you must have a ship in-system to use the movement log for sequential turns, and use the order on that ship. In simultaneous, the system movement log can be used at any time, without selecting a ship.

No, in a sequential solo game, you don't see anything the AIs do on their turn unless it triggers combat.
I don't recall there being any movement replay in sequential.

You need to select a ship or unit in space. The replay button is in the third command panel (800X600). The button looks like a pink play button (that, or a pink play button with a ship over it). It's been a very long time since I played sequential, but I do remember using that.
