If you really want say, two types of Battlecruiser graphics, you can mod the vehiclesizes.txt file. Just duplicate the Battlecruiser section, and change the primary picture filename of one of them. This will give you a choice of pictures for the same class of ship. If your shipset doesn't have the secondary picture type defined, you'll just see two identical choices for the same ship size. This would be a mod to the game data, though, and would break existing games (you'd have to start a new game to use it properly).
