They get angry if you have breathable planets already colonized by you even if that system is far, far away  It's nothing. Just crush their fleet and execute their leader in front of millions

Thank you very much! Trust me, annihilation has crossed my mind. I'm just not keen on fighting 4 sides at once.... especially since my empire is in the middle.
Thanks for the welcome! I have visited a few times, as I have owned the game for over 1/2 year now. I do not play in continuously, however, I find myself coming to it time and time again. I await MOO3, but I really think that it will have a hard time beating the deep gameplay and customization capibilities for SP4!

Those crazy AIs also claim systems that are adjacent to ones they own - which can lead to problems with disposition towards your race.

They may not have minded that you were adjacent to them, but once you entered a Partnership, then they saw all your planets. Now they have a real reason to be angry. Enter this treaty with caution next time.

I have often found that if I do not claim a system next to theirs (even if I have a colony in it). Then they do not seem to become so angry. Has anyone else noticed this?

Not at all. First just turn off the automatically claim systems you colonize (empire options screen).
Next you can manually set up what systems you claim through the borders button on the diplomacy screen.
