And what makes sure they will die off if the only way to die of old age is getting Disease? Knowing Dominions it is possible that they recuperate, luck out or something along those lines. Old age afflictions can't be healed and chance that old guy will get disease increases as he gets older.

old mages also become increasingly feeble, so less useful on the battlefield. I don't think death/nature prevents afflictions altogether per se...more like makes them less likely.

Btw, growth scale REDUCES disease affliction chance from old age. Taking growth scale is good idea for nations that have lots of old age commanders (and in some rare cases troops).

Not sure if death scale increases that chance but it's very possible.

They don't need it as much as some other nations. Death magic, as opposed to Death scale, protects their mages. Triarii and Praetorian Guard start 55 years old (50 being the start of old age). That's not severe in Growth 0, although high Death might cause problems. I haven't used them much with Broken Empire, though, because I've played against AI, and haven't had to recruit forces purely for defence. The younger soldiers have mapmove 2, and as the undead are also able to move quickly, the protection 17 of Triarii and Praetorian Guard didn't matter much. I had lots of undead to absorb damage.
