You have to summon them. Use the "Cast Ritual Spell" order. For Ermor (not Ulm!) undead themes you should have a god with at least 3 in death magic; for C'tis Desert Tombs you can hire a Sauromancer to do your summoning for you. I'm not sure about Carrion Woods - a nature/death skilled god might be necessary to use their special summons, or might not.
In any of those cases you will also need some magic gems. Your home province has a magic site that will produce some for you; you may need to wait a while before you get enough to cast the spells. You can view your current amount of magic gems by pressing F7 from the main screen.
