Adamant is a huge mod with a massive learning curve. It has the most options for racial traits and such of any of the mods I have played. It does not work well in SP games.
I have not had a chance to play the masters, eclips, space food, or CB mods in great length. I do know that they are enjoyable but take some time to learn.
Star Trek Mod has a moderate learning curve. Requires some skill to play effectively and uses mounts for engines. It is also a good SP mod.
Dark Nova Played this mod in a PBW game and outside of PBW and enjoyed it. The AI is a bit weak though.
The Expanded Mod Is more or less stock SEIV Deluxe but incorperates FQM and Neo Tech ships hulls. Some slight changes over stock but mostly stock and plays very well in SP as the AI is from the TDM mod.
TDM The best AI mod for single player to date.
Devullun Don't recall much about this mod but do remember that it was fun.
I have played more mods but I cannot recall them at this time.

Must be an older version you played. The current version has TDM AI's adapted for DN4, though they don't use Intel, which is still something I'm looking into.

For a completely new (and massivle improved, imho) game, play the proportions mod. It's a whole other game, and a very popular mod. you should have no trouble picking up a game on PBW. To be honest I'm surprised I'm the first to mention it in this thread.

I've been playing the Masters Mod the last week or so. Its pretty good, the AI is good also, at least they are givving me a good run. I don't think they are set up to atomatically generate, but I added them manually and they are proving a challenge, even with a medium bonus.

A friend of mine also mentioned to me the following mods: Carrier Mod, Imperium Verus Mod, Invasion Dev Mod ( not sure about the name of this one ) , DevNull Mod, Peace Station Mod, PvK Mod, and Ultimate Sizes Mod
Anybody ever heard of them ?

Yes.
Some of those are fairly popular like DevNull (similar to stock, but better) and Carrier Battles (not like stock, but better). The Invasion Mod by CombatWombat also has forums and has a couple of pbw games running. I've never tried the Imperium one, but I believe an older version was packaged with Deluxe and an update is available at SE.net now. The Peace Station mod has a site, but I've never tried it myself...
PvK Balance mod is stock but with highly balance culture and racial traits, and Ultimate sizes just adds a bunch of vehicle sizes for stock. I guess they're both mini mods.
Keep in mind the MM link I gave earlier has descriptions for all these mods.
